Pumpkin-Palooza!!
Pumpkins Pumpkins everywhere!
So today I made Pumpkin Lasagna and Pumpkin Rolls( like cinnamon rolls)!
Two things that are very NOT part of my normal vegan diet, but, I wanted to make some extra special pumpkiny goodness to share with good people!
I used the recipe for the Pumpkin Lasagna from The Baking Bird…...

So, just a random thought to share..
I totally am so happy and grateful that I practice yoga. It really centers me, and makes me feel so freaking awesome. Physically & mentally, it is so amazing! I feel thankful to myself for giving me the gift of daily practice. It is the best gift, and I strongly encourage everyone to do the same.
Now, I go soak up some sunshine :)

Taco Tuesday!
OK, here is the recipes for my awesome tacos, these are Collins’ absolute FAV! Last Night was Taco Tuesday at our house, like it is every Tuesday! Butternut Squash Enchiladas
I LOVE me some enchiladas, and I LOVE me some squash. This is the ultimate marriage, my absolute favorite enchiladas. The most time consuming part is prepping and cooking the squash, besides that, it comes together really well. If you happen to come across an abundance of good butternut squash, Chop, boil, and freeze it, it will last up to a year!

Take Out ToNite!
I LOVE Thai food! I could eat it everyday and never get bored! There are so many amazing delicious vegan options! Unfortunately, the white rice & rice noodles are not the most nutritious… I made this using Soba noodles instead, they are delcios, and I feel better about the buckwheat than the alternative, empty calories :)
