Thursday Uncensored Ramblings...

Looking back...
My Grandma sent me a box of old photos, from my parents marriage (they divorced before I was 2) to my birth, growing up, and to present day… Apparently she thinks she’s gonna bite the dust any day ( which she wont, stubborn & Polish, she’s got at least 10 more years…)
Also, I’ve wanted to scan this in for a while… It’s my grandparents, having a blast...

Breakfast for dinner: Breakfast Burritos!

I made my own version of breakfast burritos… I have read many different recipes for the scrambled tofu/veggie mix… So I just took what I thought sounded good, and just made it up as I went, per usual…. Turned out great! I think next time I will splurge on some Daiya shreds, that would maybe them excellente!

I just realized…. This past week, I convinced one friend to watch Earthlings, and she was moved immensely to take a stance against animal cruelty…. And I have had two others approach me seeking advice on how to go vegan :) It makes my heart sing! I truly believe we can change the world, one person at a time…

Easy Vegan Sushi dinner in under 10 minutes!
Collin was starving when we got home from swim practice tonight…. So I quickly threw together a delicious Japanese dinner for 2 :)
Handy-dandy Microwavable bag of brown rice from Trader Joes + Toasted Nori sheets + thin sliced carrots & cucumbers= veggie sushi! We were too hungry to slice them into pieces so we just ate them like a hand roll, or as Collin says, a sushi burrito :)
